The Aljarafe region was known in Rome as Vergentum (orchard) from where oil and wine supplied to the capital and other regions of the Empire. With the hope that you can enjoy this garden of aromas and flavors, we offer seasonal cuisine, local cuisine to be enjoyed just on the right time. We will also bring you to the Oleum Flumen or the river of oil, as Romans called the river Guadalquivir, the real olive culture of the region, with great tasting local oils.
